Can you believe it's been a week already?! It feels like this thing just started. So, I have a bit of a confession to make: health week is so much harder than I thought it would be. Not just because I want nothing more than to be chowing down on a baked good, but it's a lot of work to photograph every meal of the day. Blogging this late is exhausting. So, no mosaic today. But I have two photos.
Breakfast: oat groats w/ brown sugar, cinnamon, & a splash of almond milk
Lunch: red chard, mushrooms, & smashed potatoes and the juiciest, most ripest nectarine EVER
Snack: 1 rice cake w/ peanut butter, cinnamon & agave, piece of dark chocolate, almond milk, and 1 carrot
Dinner: Amy's minestrone soup with added Morton's lite salt
Water-3.5 or 4 cups. It'll be more by bed time.
Notes-From the looks of it, I've lost two pounds. But it could be less because I checked this morning pre-breakfast. I need to start walking around the neighborhood again. Maybe in the mornings.

regular posting is a pain, but it has its payoff. remind yourself of what you reminded all of us--pace yourself!
and girl, i think you look just fine. unless you're just managing thing to be healthier, there's really no need for you to lose weight, imo.

That's awesome that you lost 2 lbs! It must really help the motivation to see the desired results from eating healthy. Of course regardless of the weight loss it feels good to eat good fuel.
I'm really impressed by how organized you are about all this. I'm not typically a food blogger, more of a cute sanctuary picture blogger with some random issues thrown in, but I went out on a limb for the veganmofo thing, figuring it was good to push myself out of my cozy rut.
And pretty much every day at work, I frantically try to think of something (anything!) to post about when I get home. Themes, plans, all that is beyond me. lol.
Ooh! I've been behind on my blog reading, so I didn't see until now that you're doing the food diary thing. I was just writing on my own blog about how much I enjoy seeing what other people eat every day. I'm trying to do it more often myself as well.
You had a great health week. And you lost a couple of pounds too - that's awesome!
